Sweet and refreshing peach iced tea with thyme! – the perfect drink to cool you down on a hot day!
Yields around 3 pints
4 ripe peaches
1 cup of cold water
¾ cup granulated sugar
3 tea bags
6 cups of boiling water
Small bunch of fresh freeman herbs organic thyme
Extra thyme and peach slices for serving/garnish
Feel free to add liquor of your choice. Recommendations are gin, rum, or bourbon.
Chop up the peaches into about chunks (anyway is fine) and place into a pot with 1 cup of water and the sugar.
Bring mixture to a boil then let it simmer for about 5 minutes.
Turn off the heat and allow it to cool to room temperature, then blend using an immersion blender.
Place tea bags in a large jug, and add thyme and boiling water. Allow to steep for 5 minutes, then remove the tea bags and discard.
Leave the mixture to cool.
Fill the jug with ice, and pour the pureed peaches into the jug with the tea (feel free to strain it if you prefer not to have peach chunks).
Stir to combine all ingredients and top it off with fresh thyme and peach slices before serving.
