375 grams spaghetti
3/4 cup grated Parmesan cheese
1/2 cup fresh Freeman Herbs Organic Parsley, chopped
1/4 cup fresh Freeman Herbs Organic Basil, chopped
1/4 cup fresh Freeman Herbs Organic Cilantro, chopped
1/4 cup fresh Freeman Herbs Organic Chives, chopped
1/4 cup arugula, chopped
Zest of 1/2 lemon, finely grated
2 garlic cloves, finely chopped
1/3 cup olive oil
In a large pot of salted boiling water, cook the spaghetti until it's al dente. Reserve 1/2 cup of the cooking water before draining the spaghetti. Lightly oil the drained spaghetti and transfer it to a large bowl.
Add the grated Parmesan, chopped herbs (parsley, basil, cilantro, chives), arugula, and finely grated lemon zest to the bowl with the spaghetti. Season with salt and pepper. Set aside.
In the same pot used to cook the pasta, sauté the finely chopped garlic in olive oil. Pour this garlic-infused oil over the pasta. Add the reserved cooking water and toss the pasta well to combine.
Adjust the seasoning according to your preference. If desired, top the dish with additional grated Parmesan cheese before serving. This pasta can be enjoyed warm or at room temperature.
