Spicy Pepper & Gooseberry Jam


Ingredients

  • 3 cups fresh gooseberries, stems removed

  • 1 1/2 cups granulated sugar

  • zest of 1/2 a lemon

  • Juice of 1/2 a lemon

  • about 2-3 fresh Freeman Herbs Organic Edible Macho Peppers, seeded and finely chopped (adjust to desired heat level)


Directions


Rinse the gooseberries thoroughly and remove any stems.


In a saucepan, combine the gooseberries, granulated sugar, lemon zest, and lemon juice. Allow it to sit for about 30 minutes to let the berries release their juices.


After resting, place the saucepan over medium-high heat and bring the mixture to a boil, stirring occasionally.


Reduce the heat to medium-low and let it simmer for approximately 15-20 minutes or until the gooseberries break down and the mixture thickens.


Add the finely chopped organic edible macho peppers to the saucepan and continue cooking for an additional 5 minutes, stirring occasionally.


To test if the jam is ready, place a small amount on a chilled plate. If it gels and holds its shape, it's done. If not, continue cooking for a few more minutes and test again.


Once done, remove the saucepan from heat and let the jam cool for a few minutes.


Transfer the hot jam into a sterilized jar. Seal the jar properly and refrigerate. For longer storage, follow proper canning procedures.
