Ingredients
Puff Pastry (store-bought or homemade is optional)
2-3 tablespoons All-purpose flour
3-4 ounces prosciutto or salami, chopped into smaller pieces
1/2 cup fresh Freeman Herbs Kitchen Mini Tomatoes, halved
1/2 cup ricotta cheese
Fresh Freeman Herbs Organic Thyme, for garnish
Fresh Freeman Herbs Organic Basil, for garnish
Olive oil (optional for drizzle)
Directions
Preheat oven to 375°F.
Place your puff pastry on a floured surface roll it out into a 1/8 inch thick sheet and cut out into 2.5-3" rounds using either a knife or a cookie cutter.
Line a baking sheet with parchment paper, and place rounds roughly 1 inch apart.
Prick the top of each pastry round with a fork to prevent them from puffing up too much when baking.
Spread a thin layer of ricotta cheese into the center of the puff pastry and top with your choice of meat and tomatoes.
Optional: Drizzle each tart with a little olive oil.
Bake the tarts for roughly 15-20 minutes, or until the puff pastry turns a golden brown colour and has puffed up around the edges.
Remove from oven and allow to cool for a few minutes, then garnish with fresh thyme and basil.
