Ingredients
1/2 pound of cooked meat (optional)
6 rice paper rounds
6-12 leaves of fresh Freeman Herbs Organic red or green lettuce
6 sprigs of fresh Freeman Herbs Organic cilantro
12 leaves of fresh Freeman Herbs Organic mint
12 leaves of fresh Freeman Herbs Organic Thai basil (optional)
1/4 of English cucumber, cut into matchsticks
1 bundle of rice vermicelli
Directions
Dip the rice paper into a bowl of warm tap water, one at a time. Lay it out on a flat surface.
To the bottom third of the round, add a leaf or two of lettuce, then the protein, a small amount of vermicelli, vegetables, and herbs.
Fold up the bottom of the rice paper wrapper up and over the filling.
Fold in the two sides over the filling.
Roll up, from the bottom of the roll towards the top, tucking and rolling.
Repeat as needed and enjoy in your favourite dipping sauce!
