Cheese Quiche with Bacon, Onion and Chives


  • Pie crust

  • 2 tablespoons unsalted butter

  • 1/2 onion, thinly sliced

  • 6 large eggs, lightly beaten

  • 1 cup white cheddar cheese, shredded

  • 1/2 cup heavy cream (whole milk works too)

  • 4 tablespoons of fresh Freeman Herbs Organic chives, chopped

  • 4 slices of crispy bacon, crumbled

  • salt and pepper to taste


Follow the pie crust instructions.

Preheat oven to 375˚F.

In a pan, add butter and melt over medium heat. Add onions to caramelize (roughly 10-15 mins), season with salt and pepper, and then set aside.

In a large mixing bowl, combine cream (or milk) and eggs and whisk together until fluffy. Add in the remaining ingredients, including the onions, and mix well until combined. Add salt and pepper to taste.

Pour mixture into pie crust and place into the oven and bake for 35-45 minutes, or until the filling has set.

Remove from oven and let cool for 10 minutes.

Optional: Add bacon, caramelized onion, and organic chives to the top of the quiche.
