Basil and lemon Ice/Gelato

Refreshing and delicious basil and lemon ice!

Great for hot days!

Yields 4


- Juice of 5 lemons

- ¾ cup sugar

- ¾ cup of water

- ½ cup fresh freeman herbs organic basil

- Zest of 2 lemons


Add the juice, sugar and water to a pot and bring to a boil.

Add the basil leaves and the lemon zest and steep off the heat for 45 minutes then strain the mixture.

Add two cups of cold water, then pour into a baking dish and freeze for 1 hour.

For a little extra fun, feel free to core out the inside of the lemons and scoop some of the flavoured ice into the lemon half.
