Baked Feta Pasta with Basil & Tomatoes

Baked Feta Pasta with Basil and Tomatoes

  • 300 grams of pasta of your choice (such as Cavatappi)

  • 1 pint cherry or grape tomatoes

  • 200 grams of feta cheese

  • 1/3 cup extra virgin olive oil

  • 1/2 cup fresh Freeman Herbs Organic Basil, chopped

  • 1-2 garlic cloves, minced (adjust to your preference)

  • 1/4 teaspoon salt (adjust to taste)

  • 1/4 teaspoon pepper (adjust to taste)

  • 1/4 teaspoon chili flakes (adjust to taste)

Preheat your oven to 400°F (200°C). In a baking dish, combine the cherry or grape tomatoes, olive oil, minced garlic, salt, and pepper. Mix well.

Place the block of feta cheese in the center of the tomatoes without covering any underneath. Sprinkle chili flakes over the tomatoes and lightly drizzle additional olive oil over the feta.

Bake in the preheated oven for about 40 minutes. The cherry tomatoes should burst, and the feta cheese should soften.

While the feta bakes, cook your pasta in salted boiling water according to the package instructions. Once cooked, drain the pasta and set it aside.

After 40 minutes, remove the baking dish from the oven and stir together the tomatoes and softened feta. Add the chopped basil and the cooked pasta to the dish.

Mix everything well to combine, ensuring the flavors blend. Garnish with more chopped basil.

Serve and enjoy!
