Street Corn

  • 4 ears corn, husked

  • 1/4 cup extra-virgin olive oil 

  • 1 tablespoon paprika 

  • 1 tablespoon kosher salt 

  • 1 tablespoon freshly ground black pepper 

  • 1/2 cup mayonnaise 

  • 1/2 cup crumbled feta cheese

  • Zest of 1 lime 

  • Chopped fresh cilantro

  • Chopped fresh mint


Preheat a grill over medium-high heat. Roll the ears of corn in the olive oil in a shallow plate, then toss with the smoked paprika, salt and pepper. Grill the corn until charred on all sides, about 6 minutes. Spread the corn liberally with the mayonnaise. Top with the feta cheese and lime zest. Garnish with the cilantro and mint.
