2 oz pomegranate juice
1 oz lime juice
1 oz sage simple syrup (adjust to taste)
4-6 fresh Freeman Herbs Organic Sage leaves
1 oz sparkling water or club soda
optional: 1 oz silver tequila
optional: blackberries & sage leaves for garnish
Sage Simple Syrup:
In a small saucepan, combine the water, sugar, and fresh sage leaves.
Bring the mixture to a boil over medium heat, stirring until the sugar has completely dissolved.
Reduce the heat and simmer for 5-7 minutes to infuse the syrup with sage flavor.
Remove from heat and let it cool completely. Once cooled, strain the syrup to remove the sage leaves.
Transfer the sage simple syrup to a glass container or bottle. Store it in the refrigerator until you're ready to use.
In a cocktail shaker, add ice and combine the pomegranate juice, lime juice, and sage simple syrup.
If you're making the alcoholic version, add the silver tequila to the shaker as well.
Shake vigorously for about 10-15 seconds to chill the mixture.
Strain the mixture into a chilled glass (optional: filled with crushed ice).
Top off the mocktail with sparkling water or club soda and give it a gentle stir.
Garnish with fresh sage leaves and a blackberry or two.
